A Burger Beyond Your Dreams

Burgers have been accustomed to in our house. No, not beef, but either the Impossible Burger or the Beyond Burger. These burgers were first introduced to a Palo Alto favorite, Gott’s Roadside. At Gott’s they have this amazing burger called the kimchi burger, with the impossible burger patty, gochujang mayo, kimchi and a fried egg. It is a beautiful combination of spice and richness from the egg and sauce with some acidity that shines through from the kimchi. To replicate this at home, we decided to go on a different path. Instead of using the Impossible Burger, we used the Beyond Burger patty. For the toppings, we made a quick people instead of the kimchi for more acidity, a spicy mayo for a little more heat than Gochujang and grilled onions for a slight sweetness and an delectable char/smoky flavor.

  • Spicy Mayo
    • 1 and 1/2 tablespoons of mayo
    • 1/2 tablespoon of sriracha
    • 1 clove of garlic finely chopped
    • Pinch of chipotle powder
    • 3 slices of jalapeno finely chopped
    • 1 teaspoon of jalapeno brine

Mix all the ingredients well and a pinch of salt, squeeze of lime and mix again.

  • Quick Pickle
    • 1/2 cup vinegar
    • 2 bay leaves
    • 1 teaspoon mustard seeds
    • 1 Tablespoon dill
    • 2 cloves
    • 1 clove of garlic
    • 1 cucumber
    • 1 teaspoon black pepper (not ground)
    • 2 teaspoons of sugar
    • 1 teaspoon salt
  • Instructions
    • Put all ingredients into a saucepan except dill and cucumber and bring mixture to a boil
    • Thinly slice cucumbers while mixture is boiling and put it in a separate bowl with dill
    • Once vinegar mixture comes to a boil, pour into the bowl with cucumbers and let rest for 30 minutes

Burger Preperation:

  • Take a beyond burger patty and place it on the grill with thickly sliced onions for 5 minutes
  • Flip over your burger patty and onion and add a pretzel bun for three minutes on the grill
  • Remove the bottom bun first adding the burger patty on top of that
  • Place the grilled onions and pickles on top of the patty
  • Spread your spicy mayo and the top bun and enjoy the burger!
